Once tempered, you will be left with a smooth yet loose sweet custard. Pour the custard back into a small saucepan and heat until thickened, which takes 5 to 10 minutes. Once thickened, strain through a fine mesh strainer into an airtight container and chill for 2 hours or overnight.
